Our newest creation is a result of a year long effort to bring together elements of a few hard and a few semi-hard cheeses. The infusion of truffle mushrooms combined with the semi-hard texture render our º8 an absolutely delectable cheese. A Natural Rind Cheese, it goes great with wines as also grilled in sandwiches. We simply like to have it the way it is. This variant is not a copy of any other cheese out there...we call it Formaggio º8!
All cheeses are made with vegetable rennet, milk and have no other additives
